Ingredients
The following ingredients have 4 Servings
- 6 cups tomatoes (chopped)
- 1 cup fresh flat leaf parsley (chopped)
- 1 cup red onion (thinly sliced)
- 2 tbsp lemon juice (fresh squeezed)
- 2 tbsp extra virgin olive oil
- salt and pepper (to taste)
Instruction
- Combine tomatoes, parsley and red onion in a bowl.
- Whisk together the lemon juice and olive oil or shake them in a lidded mason jar.
- Pour the dressing over the salad and toss to combine. Taste and season with salt and pepper.
