Ingredients

The following ingredients have 4 Servings
  • 6 cups tomatoes (chopped)
  • 1 cup fresh flat leaf parsley (chopped)
  • 1 cup red onion (thinly sliced)
  • 2 tbsp lemon juice (fresh squeezed)
  • 2 tbsp extra virgin olive oil
  • salt and pepper (to taste)

Instruction

  • Combine tomatoes, parsley and red onion in a bowl.
  • Whisk together the lemon juice and olive oil or shake them in a lidded mason jar.
  • Pour the dressing over the salad and toss to combine. Taste and season with salt and pepper.
