Ingredients
The following ingredients have 4 Servings
- 1/2 cup chopped fresh mango, (from about 1/2 mango)
- 2 green onions, roughly chopped
- 2 tablespoons rice vinegar
- 4 1/2 teaspoons low-sodium tamari
- 1 teaspoon ground allspice
- 1/2 small jalapeño pepper, seeded and chopped
- 1 (14.0-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch cubes
- 1 yellow bell pepper, cut into 1-inch cubes
- 1 1/2 cup (1-inch) pineapple cubes
Instruction
- Prepare a grill for medium-high-heat cooking.
- In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
- Thread tofu, peppers and pineapple onto skewers. (If using wooden skewers, soak in water for 30 minutes before assembling).
- Brush with mango sauce and grill until browned and vegetables are tender, about 4 minutes per side.
- Serve with any remaining sauce.
