Ingredients

The following ingredients have 4 Servings
  • 1/2 cup chopped fresh mango, (from about 1/2 mango)
  • 2 green onions, roughly chopped
  • 2 tablespoons rice vinegar
  • 4 1/2 teaspoons low-sodium tamari
  • 1 teaspoon ground allspice
  • 1/2 small jalapeño pepper, seeded and chopped
  • 1 (14.0-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 yellow bell pepper, cut into 1-inch cubes
  • 1 1/2 cup (1-inch) pineapple cubes

Instruction

  • Prepare a grill for medium-high-heat cooking.
  • In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
  • Thread tofu, peppers and pineapple onto skewers. (If using wooden skewers, soak in water for 30 minutes before assembling).
  • Brush with mango sauce and grill until browned and vegetables are tender, about 4 minutes per side.
  • Serve with any remaining sauce.
