Ingredients
The following ingredients have 4 Servings
- 3 Tbsps olive oil
- 12 ozs Boiled potatoes (sliced)
- 6 scallions (cut in half)
- 1 clove garlic cloves (chopped)
- 7 ozs Chorizo (cooking sausage)
- salt
- Black pepper
- 4 Flour tortillas
- 2 cups grated Cheese
- 4 Lettuce
Instruction
- Heat 2 tablespoons olive oil in a large frying pan and fry the garlic, chorizo and potatoes for about 5 minutes until lightly browned.
- Add the spring onions and cook for 1 minute. Season to taste with salt and pepper.
- Divide the mixture between the tortillas and sprinkle with the cheese. Add the lettuce leaves and fold over the tortillas to make a half moon shape.
- Brush the tortillas with a little of the remaining oil.
- Heat a dry frying pan and cook the tortillas until the cheese has melted. Serve immediately.
