Ingredients

The following ingredients have 4 Servings
  • 3 Tbsps olive oil
  • 12 ozs Boiled potatoes (sliced)
  • 6 scallions (cut in half)
  • 1 clove garlic cloves (chopped)
  • 7 ozs Chorizo (cooking sausage)
  • salt
  • Black pepper
  • 4 Flour tortillas
  • 2 cups grated Cheese
  • 4 Lettuce

Instruction

  • Heat 2 tablespoons olive oil in a large frying pan and fry the garlic, chorizo and potatoes for about 5 minutes until lightly browned.
  • Add the spring onions and cook for 1 minute. Season to taste with salt and pepper.
  • Divide the mixture between the tortillas and sprinkle with the cheese. Add the lettuce leaves and fold over the tortillas to make a half moon shape.
  • Brush the tortillas with a little of the remaining oil.
  • Heat a dry frying pan and cook the tortillas until the cheese has melted. Serve immediately.
