Ingredients
The following ingredients have 4 Servings
- 2 tortilla flatbreads
- 125 g tinned mackerel in tomato sauce
- 125 g mozzarella
- 130 g courgette (cut into ribbons)
- ¼ red onion (cut into slices)
- 70 g cherry tomatoes (cut in half)
Instruction
- Heat the tortillas on both sides in a dry frying pan over a low-medium heat so that they crisp up slightly. If they start to puff up, press them down with a spatula.
- Cut the mozzarella into slices and squeeze any excess water out by putting it between a couple of pieces of kitchen roll and pressing gently.
- Separate the mackerel from the tomato sauce and spread the tomato sauce onto each base.
- Top with the mackerel pieces, courgette, tomatoes, red onion and mozzarella slices.
- Put under the grill and cook until the cheese is bubbly and everything is hot.
- Serve with salad.
