Ingredients

The following ingredients have 4 Servings
  • 2 tortilla flatbreads
  • 125 g tinned mackerel in tomato sauce
  • 125 g mozzarella
  • 130 g courgette (cut into ribbons)
  • ¼ red onion (cut into slices)
  • 70 g cherry tomatoes (cut in half)

Instruction

  • Heat the tortillas on both sides in a dry frying pan over a low-medium heat so that they crisp up slightly. If they start to puff up, press them down with a spatula.
  • Cut the mozzarella into slices and squeeze any excess water out by putting it between a couple of pieces of kitchen roll and pressing gently.
  • Separate the mackerel from the tomato sauce and spread the tomato sauce onto each base.
  • Top with the mackerel pieces, courgette, tomatoes, red onion and mozzarella slices.
  • Put under the grill and cook until the cheese is bubbly and everything is hot.
  • Serve with salad.
