Ingredients

The following ingredients have 6 Servings
  • 2 cups Black or red Quinoa (cooked)
  • 15 oz Black beans (from a can)
  • 8 oz Button mushrooms (diced in small pieces)
  • 1 in Red Pepper (diced small pieces)
  • 1/2 Red Onion (chopped)
  • 1/4 cup Cilantro leaves (chopped)
  • 1 tablespoon Lime zest
  • 1/4 cup Lime juice (about 1 large lime)
  • 2 tablespoons Smoked paprika
  • 1 Tablespoon Ancho chili powder
  • 1 -2 tablespoon Cornstarch (more if needed)
  • Salt and Pepper to taste
  • 8 Hamburger Buns (optional)
  • 12 Pickles (optional)
  • 6 Tomato Slices (optional)

Instruction

  • Blend half of black beans into paste
  • In a bowl, mix all the ingredients together
  • Shape into patties
  • Heat olive oil in a skillet over medium heat
  • Cook patties for 3-4 minutes on each side
  • Serve them by themselves or inside a toasted bun
