Ingredients
The following ingredients have 6 Servings
- 2 cups Black or red Quinoa (cooked)
- 15 oz Black beans (from a can)
- 8 oz Button mushrooms (diced in small pieces)
- 1 in Red Pepper (diced small pieces)
- 1/2 Red Onion (chopped)
- 1/4 cup Cilantro leaves (chopped)
- 1 tablespoon Lime zest
- 1/4 cup Lime juice (about 1 large lime)
- 2 tablespoons Smoked paprika
- 1 Tablespoon Ancho chili powder
- 1 -2 tablespoon Cornstarch (more if needed)
- Salt and Pepper to taste
- 8 Hamburger Buns (optional)
- 12 Pickles (optional)
- 6 Tomato Slices (optional)
Instruction
- Blend half of black beans into paste
- In a bowl, mix all the ingredients together
- Shape into patties
- Heat olive oil in a skillet over medium heat
- Cook patties for 3-4 minutes on each side
- Serve them by themselves or inside a toasted bun
