Ingredients
The following ingredients have 2 Servings
- 1 bag mixed salad mix
- 1 apple (thinly sliced)
- 1/2 cup candied pecans
- 1/2 cup butternut squash (cubed)
- 1/2 cup brussel sprouts (halved and/or shredded)
- 1 tbsp balsamic vinegar
- 1/8 cup maple syrup
- 2 tbsp Dijon mustard
- 1/4 cup olive oil
- 1/2 lemon juice & zest
- Sprinkle of salt and pepper
Instruction
- In a medium sauce pan on medium heat, saute brussel sprouts and butternut squash with olive oil and balsamic for 5 minutes until softened
- Prepare salad by laying a bed of greens in bowl (amount varies by individual preference)
- On top of salad bed place thinly sliced apples, candied pecans, and butternut squash/brusselsprout combo
- In a small bowl mix maple syrup, lemon juice, olive oil, dijon mustard, and salt and pepper
- Drizzle dressing over prepared Fall Salad and serve
