Ingredients

The following ingredients have 2 Servings
  • 1 bag mixed salad mix
  • 1 apple (thinly sliced)
  • 1/2 cup candied pecans
  • 1/2 cup butternut squash (cubed)
  • 1/2 cup brussel sprouts (halved and/or shredded)
  • 1 tbsp balsamic vinegar
  • 1/8 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1/4 cup olive oil
  • 1/2 lemon juice & zest
  • Sprinkle of salt and pepper

Instruction

  • In a medium sauce pan on medium heat, saute brussel sprouts and butternut squash with olive oil and balsamic for 5 minutes until softened
  • Prepare salad by laying a bed of greens in bowl (amount varies by individual preference)
  • On top of salad bed place thinly sliced apples, candied pecans, and butternut squash/brusselsprout combo
  • In a small bowl mix maple syrup, lemon juice, olive oil, dijon mustard, and salt and pepper
  • Drizzle dressing over prepared Fall Salad and serve
