Ingredients

The following ingredients have 12 Servings
  • 6 strips bacon (chopped)
  • 1 small onion (chopped)
  • 1 cup chopped celery
  • 2 cloves garlic (minced)
  • 1 pound ground beef
  • 2 pounds russet potatoes (peeled and chopped inch ½ inch cubes)
  • 6 cups chicken broth
  • 15 ounce can diced tomatoes (drained)
  • 8 ounces cream cheese
  • 1 teaspoon dried thyme
  • ¼ cup fresh chopped parsley
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper
  • Corn starch (to thicken the soup, if you like)
  • Garnishes: extra shredded cheese, bacon bits, chopped scallions
