Ingredients

The following ingredients have 4 Servings
  • 6 hard boiled eggs (coarsely chopped)
  • 1/4 cup sweet onion (minced)
  • 1/4 cup red bell pepper (minced)
  • 1/4 cup bacon (crumbled)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh lemon juice
  • Zest of one lemon
  • 1/2 cup mayonnaise
  • 1/2 teaspoon coarse kosher salt

Instruction

  • Place half of the eggs in a large mixing bowl, mash lightly to get yolks to smooth.
  • Gently fold in remaining chopped egg, onion, bell pepper, bacon, parsley, lemon juice and zest, mayonnaise and salt and pepper.
  • Cover and chill for 30 minutes to 1 hour.
  • Serve as an egg salad sandwich or egg salad salad.
