- 6 ounce dry ramen noodles (broken into pieces - discard the seasoning packets. )
- 1 cup carrots (matchstick cut )
- ½ cup green onion (sliced)
- 1 cup sliced almonds (toasted)
- ½ cup olive oil
- ¼ cup rice vinegar
- 2 Tablespoons honey
- 2 garlic cloves (minced)
- 1 Tablespoon ginger (minced)
- 1 teaspoon sesame oil
- Kosher salt and black pepper to taste
