- 2 lbs boneless, skinless chicken thighs cut into 2-inch pieces
- 2 Tablespoons vegetable oil
- 4 Tablespoons unsalted butter
- 1 medium onion, diced
- 1 2-inch piece of ginger, peeled and minced
- 4 cloves garlic, minced
- 1 Tablespoon tomato paste
- 1 (14.5-oz.) can chopped tomatoes
- 2 cups heavy cream (or one 14.5-oz. can coconut milk)
- 1 Tablespoon Garam Masala
- 1 Tablespoon turmeric
- 1 Tablespoon paprika
- 2 teaspoons cumin
- 1 Tablespoon coriander
- 1/2 teaspoon cinnamon
- 1 Tablespoon sugar
