Ingredients
The following ingredients have 4 Servings
- 2 heads Broccoli
- 1/2 cup frozen spinach (defrosted and drained well)
- 1/4 cup Scallions (sliced)
- 1 Lemon Zest (only)
- 1 cup Cheddar Cheese (grated)
- 1/4 cup Parmesan cheese (grated)
- 2 eggs
- 1/3 cup Sour Cream
- 1/2 teaspoon Pepper
- 1/4 teaspoon Salt
Instruction
- Preheat oven to 180C/355F.
- Cut broccoli into evenly sized florets and place in a microwave safe container with ¼ cup of water. Microwave on high for 3 minutes or until the broccoli is tender. Drain well and allow to cool.
- Chop the broccoli into very small pieces, You should end up with approximately 2-2 ½ cups.
- Place the chopped broccoli in a bowl with all the remaining ingredients and mix well.
- Pour the mixture into a 11 x 7in rectangle brownie pan, lined with parchment paper, and smooth into an even layer.
- Bake for 25 minutes, until the bites are puffed and browning.
- Allow to cool for 10 minutes, before cutting into 24 squares.
