Ingredients
The following ingredients have 4 Servings
- 3 Tbsps vegetable oil
- 2 cloves garlic cloves (finely sliced)
- fresh ginger (peeled and cut into fine strips)
- 3 Tbsps yellow Curry paste
- 21 ozs Steak (cut into thin slices)
- 2 cups Beef stock (or water)
- 1.667 cups Coconut milk
- 12 Thai Basil
- 1 Lime (juiced)
Instruction
- Heat the oil in a large pan and gently fry the garlic until soft.
- Add the ginger, stir in the curry paste and cook for 2 minutes.
- Add the beef, stir for 2 minutes then add the stock, coconut milk and Thai basil leaves. Bring to a boil then simmer very gently for 15 minutes or until the beef is cooked through.
- Stir in the lime juice, season with salt and pepper and serve.
