Ingredients

The following ingredients have 4 Servings
  • 3 Tbsps vegetable oil
  • 2 cloves garlic cloves (finely sliced)
  • fresh ginger (peeled and cut into fine strips)
  • 3 Tbsps yellow Curry paste
  • 21 ozs Steak (cut into thin slices)
  • 2 cups Beef stock (or water)
  • 1.667 cups Coconut milk
  • 12 Thai Basil
  • 1 Lime (juiced)

Instruction

  • Heat the oil in a large pan and gently fry the garlic until soft.
  • Add the ginger, stir in the curry paste and cook for 2 minutes.
  • Add the beef, stir for 2 minutes then add the stock, coconut milk and Thai basil leaves. Bring to a boil then simmer very gently for 15 minutes or until the beef is cooked through.
  • Stir in the lime juice, season with salt and pepper and serve.
