The following ingredients have 4 Servings
- 2 lbs jumbo sea scallops ((pat dry with paper towel))
- 1 Tbsp cooking oil
- 1 1/2 Tbsp choo chee curry paste (or use regular Thai red curry paste to sub)
- 2 Tbsp roasted grated coconut (if using regular red curry paste)
- 1 1/2 cup canned coconut cream (divided)
- 6 kaffir lime leaves ((tear edges to release flavor))
- 1 Tbsp fish sauce (or more to taste)
- 2 Tbsp coconut sugar (see notes)
