The following ingredients have 4 Servings
  • 2 lbs jumbo sea scallops ((pat dry with paper towel))
  • 1 Tbsp cooking oil
  • 1 1/2 Tbsp choo chee curry paste (or use regular Thai red curry paste to sub)
  • 2 Tbsp roasted grated coconut (if using regular red curry paste)
  • 1 1/2 cup canned coconut cream (divided)
  • 6 kaffir lime leaves ((tear edges to release flavor))
  • 1 Tbsp fish sauce (or more to taste)
  • 2 Tbsp coconut sugar (see notes)
