Ingredients
The following ingredients have 4 Servings
- 4 cups fish stock
- 1 stick Lemongrass (finely chopped)
- 1.25 inches fresh ginger (grated)
- 0.5 red chili pepper (deseeded and cut into rings)
- salt
- freshly ground Black pepper
- 1 Tbsp Lime juice
- 1 Tbsp Oil
- 4 Scallop (ready prepared)
- 1.5 Tbsps Fish sauce
- Basil
- cilantro
Instruction
- Bring the fish stock, lemongrass, ginger and chilli to a boil and simmer for 10 minutes. Season to taste with salt, pepper and lime juice.
- Heat the oil in a frying pan and fry the scallops for 1 minute on each side. Put in the hot soup and stir in the fish sauce. Leave to stand for a few minutes.
- Season again, then spoon into bowls and garnish with coriander and basil leaves.
