Ingredients

The following ingredients have 4 Servings
  • 4 cups fish stock
  • 1 stick Lemongrass (finely chopped)
  • 1.25 inches fresh ginger (grated)
  • 0.5 red chili pepper (deseeded and cut into rings)
  • salt
  • freshly ground Black pepper
  • 1 Tbsp Lime juice
  • 1 Tbsp Oil
  • 4 Scallop (ready prepared)
  • 1.5 Tbsps Fish sauce
  • Basil
  • cilantro

Instruction

  • Bring the fish stock, lemongrass, ginger and chilli to a boil and simmer for 10 minutes. Season to taste with salt, pepper and lime juice.
  • Heat the oil in a frying pan and fry the scallops for 1 minute on each side. Put in the hot soup and stir in the fish sauce. Leave to stand for a few minutes.
  • Season again, then spoon into bowls and garnish with coriander and basil leaves.
