- 2 cups (150 g) bean sprouts
- 1 carrot, julienned
- 2 mangoes, diced
- 1/4 cup (60 ml) lime juice
- 3 tbsp (45 ml) mirin
- 1 tbsp (15 ml) fish sauce
- 1 tbsp (15 ml) olive oil
- 1 tsp (5 ml) sambal oelek
- 3 tbsp Thai basil or cilantro leaves
- 2 tbsp large toasted coconut shavings or coarsely chopped toasted peanuts
