Ingredients
The following ingredients have 6 Servings
- 1 kirby or small cucumber, diced
- 1/2 red jalapeno or hot pepper, minced
- 2 tablespoons rice vinegar
- 1/2 teaspoon fish sauce
- 2 ripe avocados, diced
- 1/2 teaspoon fish sauce
- 1/4 lime, juiced, plus more if needed
- 1/4 cup cilantro, chopped
- 1/2 red jalapeno or hot pepper, minced
- 1/4 cup chopped cashews
Instruction
- For the relish, combine the cucumber, hot pepper, vinegar, and fish sauce in a small dish. Stir to combine and let marinate while you make the guacamole. Right before serving, drain in a small colander.
- For the guacamole, gently stir together the avocado, fish sauce, lime juice, cilantro, and hot pepper. Taste, and add more fish sauce for salt or lime juice for tang.
- To serve, spread the guacamole in a flat dish. Top with the cucumber relish and sprinkle the cashews over the entire dish.
- Serve with tortilla chips or rice crackers.
