Ingredients

The following ingredients have 4 Servings
  • 2 teaspoon coconut oil
  • 1 tablespoon Thai red curry paste
  • 2 garlic cloves (minced)
  • ¼ cup lite coconut milk (well-shaken)
  • 4 1/2-inch thick bone-in pork chops
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • juice of ½ lime

Instruction

  • Heat the coconut oil in a small skillet set over medium heat. Stir in the curry paste and garlic. Cook, stirring, until the mixture starts to darken. Pour in the coconut milk and whisk until smooth.
  • Season the pork chops on both sides with salt and pepper. Place in a baking dish. Pour the coconut milk mixture over the pork and toss to coat. Let rest for 30 minutes.
  • Preheat the grill to medium. Light coat the grill with oil.
  • Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, about 2 minutes. Squeeze the lime juice over the pork chops.
  • Serve.
