Ingredients
The following ingredients have 4 Servings
- 2 teaspoon coconut oil
- 1 tablespoon Thai red curry paste
- 2 garlic cloves (minced)
- ¼ cup lite coconut milk (well-shaken)
- 4 1/2-inch thick bone-in pork chops
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
- juice of ½ lime
Instruction
- Heat the coconut oil in a small skillet set over medium heat. Stir in the curry paste and garlic. Cook, stirring, until the mixture starts to darken. Pour in the coconut milk and whisk until smooth.
- Season the pork chops on both sides with salt and pepper. Place in a baking dish. Pour the coconut milk mixture over the pork and toss to coat. Let rest for 30 minutes.
- Preheat the grill to medium. Light coat the grill with oil.
- Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, about 2 minutes. Squeeze the lime juice over the pork chops.
- Serve.
