Ingredients

The following ingredients have 4 Servings
  • 2 English cucumbers
  • 1/2 cup sliced red onion
  • 2 tablespoons chopped green onion
  • 1/4 cup rice vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • toasted sesame seeds (optional garnish)

Instruction

  • Slice the cucumber thinly.
  • Slice red onion and chop green onion.
  • Combine veggies in a bowl.
  • Mix dressing ingredients in a small jar and shake well.
  • Pour over veggies and toss gently.
  • Garnish with toasted sesame seeds and chopped peanuts.
  • Serve right away.
