- 1 ½ tablespoons grated palm sugar or brown sugar
- ¼ teaspoon ground ginger
- 1 tablespoon olive oil
- 1 small shallot (chopped)
- ½ cup shredded carrots
- 2 baby bok choy (chopped, keep white parts separate from dark leafy green parts)
- ½ pound large fresh or frozen shrimp (defrosted, peeled, and deveined)
- ½ cup fresh Thai basil or regular basil leaves (chopped)
- Fresh bean sprouts for garnishing
