Ingredients

The following ingredients have 4 Servings
  • 1/2 cup butter, unsalted (room temperature)
  • 1/3 cup sugar
  • 1 egg (room temperature)
  • 2 tsp. vanilla extract
  • 1 1/3 cup flour, all purpose
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips, melted
  • 1/2 cup butter, unsalted
  • 3 Tbsp. milk
  • 2 Tbsp. cocoa powder, unsweetened
  • 2 1/2 cups powdered sugar

Instruction

  • Preheat oven to 350 degrees and line cookies sheets with parchment paper.
  • Using a stand mixer, beat butter and sugar for 3 minutes.  Scrape down the sides of the bowl frequently to make sure everything is evenly mixed.  
  • Add egg and vanilla. (To get a room temperature egg fast, place cold egg in a bowl of warm-hot water for 3 minutes.) Scrape down the sides of the bowl and mix again.
  • In a separate bowl whisk together flour, baking powder and salt.  Add dry ingredients to wet and mix until BARELY combined.  
  • Pour in melted chocolate chips and mix until combined.  
  • Make dough balls roughly the size of a golf ball and place on cookie sheets.  Bake for 7-8 minutes, they will still look very soft but they will firm as they cool. 
  • Icing: Place butter, milk and cocoa powder in a small sauce pan and stir until melted. Pour into a medium bowl with powdered sugar and whisk until smooth.  Let cool for 5 minutes and then pour over cooled cookies.  I left my cookies on a cooling rack and let the extra icing drip off to a cookie sheet. Top with strawberries, raspberries, cherries or sprinkles!
