Ingredients

The following ingredients have 4 Servings
  • 1 1/2 teaspoons extra virgin olive oil
  • 2 tablespoons whole kernel corn
  • ¼ cup diced green or red bell pepper
  • pinch of ground cumin
  • 1/8 teaspoon ancho chile powder, plus extra for garnishing
  • 2 tablespoons chopped cilantro
  • 1 tablespoon finely chopped jalapeno, deseeded and deveined
  • 1 teaspoon lime juice
  • salt to taste
  • 1 (10 ounce) container Sabra Classic Hummus

Instruction

  • Add olive oil to a skillet over medium heat. Place the corn and bell pepper into the skillet and sauté for 4 minutes. Sprinkle the seasonings into the pan and stir well. Sauté for an additional 3 minutes and then remove from heat and place into a small bowl.
  • Add cilantro, jalapeno, lime juice and salt to the bowl and stir. Place in the center of the hummus container or stir it in. Sprinkle a little extra ancho chile powder for a garnish.
