Ingredients
The following ingredients have 4 Servings
- 1 1/2 teaspoons extra virgin olive oil
- 2 tablespoons whole kernel corn
- ¼ cup diced green or red bell pepper
- pinch of ground cumin
- 1/8 teaspoon ancho chile powder, plus extra for garnishing
- 2 tablespoons chopped cilantro
- 1 tablespoon finely chopped jalapeno, deseeded and deveined
- 1 teaspoon lime juice
- salt to taste
- 1 (10 ounce) container Sabra Classic Hummus
Instruction
- Add olive oil to a skillet over medium heat. Place the corn and bell pepper into the skillet and sauté for 4 minutes. Sprinkle the seasonings into the pan and stir well. Sauté for an additional 3 minutes and then remove from heat and place into a small bowl.
- Add cilantro, jalapeno, lime juice and salt to the bowl and stir. Place in the center of the hummus container or stir it in. Sprinkle a little extra ancho chile powder for a garnish.
