Ingredients

The following ingredients have 4 Servings
  • 1 lime
  • 1/4 cup tequila
  • 2 tablespoon olive oil
  • 1/2 teaspoon salt
  • 4 cloves garlic
  • 1/2 jalapeno
  • 1/4 cup fresh cilantro
  • 3 chicken breasts (boneless, skinless, cut in half lengthwise)
  • 1 cup long grain rice (I used basmati)
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 1/2 teaspoon cumin
  • salt and pepper to taste
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric (for nice yellow color)
  • 2 cups low sodium chicken broth
  • juice from half a lime
  • fresh cilantro (sliced tomatoes, sliced jalapenos and lime slices for serving)
