Ingredients
The following ingredients have 4 Servings
- 20 ounces tater tots
- 1 pound bacon (or 1 pound sausage *see note)
- 1 onion (diced)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 6 eggs
- ⅔ cup milk
- ½ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 cups Mexican blend shredded cheese (or shredded cheddar cheese, divided )
Instruction
- Spread the tater tots in a single layer in a greased 9x13 pan. Sprinkle 1 cup of cheese over the tots.
- Chop the bacon into 1" pieces and cook in a medium skillet until crisp. Remove the bacon to a paper towel-lined plate, leaving 2 tablespoons of bacon fat in the pan.
- Add onion to the pan and cook over medium heat until softened. Add the bell peppers and stir to combine. Sprinkle over the tater tots along with ⅔ of the bacon.
- Whisk eggs, milk, garlic powder, salt, & pepper in a bowl. Pour over the tater tots.
- Cover tightly with foil and refrigerate overnight.
- Preheat the oven to 350°F. Bake the covered casserole for 40 minutes. Remove the cover, top with remaining cheese and bacon. Turn the oven up to 425°F and bake an additional 15-20 minutes or until set and cheese is browned.
