Ingredients

The following ingredients have 8 Servings
  • 1-1/2 pound(s) chicken breasts, boneless and skinless-cut into bite sized pieces
  • 1 tablespoon(s) sesame oil
  • 1 - onion-chopped
  • 2 tablespoon(s) soy sauce
  • 2 - celery stalks,chopped
  • 2 large carrots,diced
  • 1 cup(s) frozen peas
  • 6 cup(s) cooked white rice
  • 1/2 cup(s) soy sauce
  • 2 large eggs
  • 1/2 cup(s) cashews, unsalted

Instruction

  • Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes or until chicken is no longer pink.
  • Stir in carrots, celery,peas and cashews for another 5 min.Then add rice nd stir thoroughly. Finally, stir in raw,scrambled eggs and 1/3 cup soy sauce. Heat through and serve hot.
