Ingredients

The following ingredients have 4 Servings
  • 4 Sweet Potatoes
  • 1/2 Pound Ground Beef or Turkey
  • 1/3 Cup Onion (minced )
  • 1 Clove Garlic (minced)
  • 1/4 Teaspoon Celery Salt
  • 1/2 Teaspoon Cumin
  • 1 Teaspoon Cornstarch
  • 1 Teaspoon Chili Powder
  • 1/4 Teaspoon Paprika
  • Pinch Sugar
  • Pinch Salt and Pepper
  • 1 Tablespoon Water
  • 1 Can Pinto Beans (black beans or black eyed peas, drained and rinsed)
  • Taco Toppings (such as cheese, sour cream, cilantro, salsa, etc)

Instruction

  • Heat the oven to 400 degrees and place the sweet potatoes on a baking sheet.
  • Pierce the skins a few times on top and bake for 45-60 minutes or until cooked through.
  • Meanwhile, heat a skillet to medium heat and add the ground meat.
  • After about 2 minutes, add the onion and garlic and cook until no pink remains, stirring occasionally.
  • Drain off any grease and add the seasonings, cornstarch, sugar and salt and pepper.
  • Stir to combine.
  • While stirring, add the water and beans and bring to a simmer.
  • Allow to cook for 2-3 minutes and remove from heat.
  • Slice open each potato and squeeze gently to open.
  • Using a fork, mash the insides a bit and add a pinch of salt.
  • Add the meat and toppings and dig in!
