Ingredients

The following ingredients have 6 Servings
  • 4 bell peppers (, each cut into four pieces vertically, seeds and core discarded)
  • 1 Tbs. olive oil
  • 1 Tbs. taco seasoning
  • 1 cup salsa
  • 1 cup shredded Mexican cheese (, divided)
  • 6 Tbs. black beans
  • 1/4 cup corn kernels
  • 1 avocado (, pitted peeled and chopped)
  • 1 scallion (, sliced on diagonal)
  • 1 Tbs. chopped cilantro
  • 1 jalapeno (, thinly sliced crosswise and seeded)

Instruction

  • Preheat oven to 375F. Line a baking sheet with foil.
  • Combine olive oil and taco seasoning and brush on insides of the bell peppers. Cook 10 minutes.
  • Remove peppers from oven and top with salsa, 1/2 cup cheese, black beans, corn and then the remaining 1/2 cup cheese. Return to oven and cook an additional 15 minutes until heated through and cheese is melted.
  • Top with avocado, scallion, cilantro and jalapeno slices.
