Ingredients
The following ingredients have 4 Servings
- 8 oz Pad Thai Rice Noodles
- 4 Tbsp Sesame Oil
- 3 Scallions (thinly sliced)
- 2 Tsp Fresh Ginger
- 1 Garlic Clove (minced)
- 1 Tsp Crushed Red Pepper Flakes (or to taste)
- 1 lb Lean Ground Turkey
- 2 Tbsp Low Sodium Soy Sauce
- 1 Tbsp Rice Wine Vinegar
- 1 Tbsp Low Sodium Chicken Broth
- 1 Tbsp Fresh Cilantro (chopped )
Instruction
- In a skillet, heat the oil over medium heat. Add the scallions, ginger, garlic, and pepper flakes. Cook, stirring constantly until fragrant, about 1 minute.
- Add the ground turkey to the skillet. Cook until the meat is no longer pink, about 5 minutes.
- While the turkey is cooking, Place noodles in a medium bowl, cover with boiling water. Let stand until noodles soften, about 3 minutes. Drain and set aside.
- To the skillet, stir in the soy sauce, vinegar, and chicken broth. Add the rice noodles and toss to combine.
- Optionally garnish with fresh cilantro and serve.
