Ingredients

The following ingredients have 6 Servings
  • 4 strips bacon (diced)
  • 1-1/2 cups fresh asparagus spears (cut into 1-in pieces)
  • 1/2 cup diced sweet red pepper
  • 3 cloves garlic (minced)
  • 6 large eggs (lightly beaten)
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 cup shredded swiss cheese
  • 1 tablespoon minced fresh parsley

Instruction

  • In a 12-in skillet, cook bacon over medium-high heat until crispy. Add asparagus, pepper, and garlic and saute 8-10 minutes until veggies are just barely tender.
  • Stir in eggs, milk, and season with salt and pepper to taste. Reduce heat to medium and let eggs cook without stirring 5-8 minutes until eggs are set. Remove from heat and sprinkle with cheese. Broil under high heat 1-2 minutes until cheese is melted. Remove from oven and sprinkle parsley over top. Cut frittata into wedges and serve immediately. Enjoy!
