  • 3 large egg yolks
  • 1/2 cup calamondin juice ((from about 12-18 calamondins - depending on how juicy they are) strained to remove any excess pulp)
  • 1/4 teaspoon calamondin zest
  • 1 cup heavy whipping cream
  • 2 tablespoons confectioners sugar
  • 1 teaspoon gelatin
  • 1 tablespoon water
  • 1/4 cup shredded sweetened coconut (toasted)
