Ingredients

The following ingredients have 4 Servings
  • 2 cups biscuit baking mix
  • 2 tbsp sugar
  • 1/4 cup cold butter
  • 2/3 cup milk
  • 1/4 cup strawberry jam
  • 1/4 cup powdered sugar
  • 1 tbsp milk

Instruction

  • Combine baking mix and sugar in a medium bowl. Using a pastry blender or two knives, blend in cold butter.
  • Add milk and stir until just moistened.
  • Add one tablespoon of muffin batter into each of 9 paper lined muffin cups that have been sprayed with nonstick spray.
  • Add one teaspoon strawberry jam into each muffin cup. Divide the remaining batter into each muffin cup, about 2 tablespoons each.
  • Bake at 425 for 14 - 16 minutes or until a cake tester comes out crumbly.
  • Make the glaze by whisking powdered sugar and milk together until smooth. Drizzle over cooled muffins.
