The following ingredients have 4 Servings
- 2 cups biscuit baking mix
- 2 tbsp sugar
- 1/4 cup cold butter
- 2/3 cup milk
- 1/4 cup strawberry jam
- 1/4 cup powdered sugar
- 1 tbsp milk
Instruction
- Combine baking mix and sugar in a medium bowl. Using a pastry blender or two knives, blend in cold butter.
- Add milk and stir until just moistened.
- Add one tablespoon of muffin batter into each of 9 paper lined muffin cups that have been sprayed with nonstick spray.
- Add one teaspoon strawberry jam into each muffin cup. Divide the remaining batter into each muffin cup, about 2 tablespoons each.
- Bake at 425 for 14 - 16 minutes or until a cake tester comes out crumbly.
- Make the glaze by whisking powdered sugar and milk together until smooth. Drizzle over cooled muffins.
