The following ingredients have 4 Servings
- 1 large sweet potato (washed and dried)
- 2 slices bacon (cut into 1/2" slices)
- 1/4 onion (diced)
- 1/2 apple (diced)
- 2 Tablespoons crumbled Gorgonzola cheese
Instruction
- Preheat oven to 400 ℉.
- Place a wire rack on a baking sheet.
- Slice off each end of the sweet potato so each end is flat.
- Slice the sweet potato lengthwise into ¼-inch thick slices.
- Arrange sweet potato slices in a single layer on the wire rack.
- Bake for 15 minutes or until the sweet potato slices are tender but not fully cooked.
- Remove the baking sheet from oven.
- Place the sweet potato slices in a toaster. Toast until hot and edges are crispy. The amount of time required will depend on your individual toaster.
- While the sweet potatoes are in the oven, cook the bacon pieces in a skillet over medium heat. Once cooked, add the diced onions and apples and cook for about 5 minutes.
- Once the bacon, apples, and onions are cooked and the sweet potatoes have been toasted, top the sweet potato toast with chopped cooked bacon, apples, and onions.
- Crumble the gorgonzola cheese on top of each sweet potato toast.
