Ingredients

The following ingredients have 56 Servings
  • 6 large sweet potatoes (washed and cut into 1/2 inch slices)
  • 1/4 cup olive oil
  • 1/2 tsp. salt and pepper
  • 1 lb extra lean ground beef
  • 4 tbsp. homemade taco seasoning (can also use store-bought if in a pinch)
  • One batch of guacamole

Instruction

  • Preheat oven to 375 degrees F. Wash the sweet potatoes and cut them into 1/2 inch slices.
  • Place the slices in a large bowl and toss with olive oil, salt and pepper.
  • Line a baking sheet with parchment paper, and place the sweet potato slices evenly in a single layer across the baking sheet.
  • Bake in oven for 40-50 minutes or until soft when pierced with a fork.
  • Meanwhile, while the potatoes are in the oven, cook the ground beef in a large frying pan over medium heat for about 7-8 minutes, stirring often, or until cooked through and no longer pink. Add taco seasoning and cook for an additional 2-3 minutes.
  • Prepare the guacamole according to directions.
  • Once the sweet potato slices are cooked, remove from oven and evenly divide the ground beef among them, placing about 1-2 tbsp. on top of each slice. Next, top with equal amounts of guacamole. Serve immediately.
