The following ingredients have 4 Servings
  • 3 Large Cloves of Garlic (peeled and smashed)
  • 1 Tbs + 1/2 tsp Olive Oil (extra virgin)
  • 1 Large Sweet Potato (small dice, about 2 C (305g))
  • 1/2 tsp Chili Powder
  • 1/4 tsp Smoky Paprika
  • 1/4 tsp Fine Sea Salt
  • 1 1/2 C (245g) Pinto Beans (cooked, 1 can, drained)
  • 1/2 Lime (juiced)
  • 1 tsp Adobo Sauce (from a can of chipotle peppers* (see note) - gluten free if needed)
  • 1/4 tsp Fine Sea Salt
  • 4 Large Eggs
  • 2 tsp Olive Oil or Butter
  • 4-8 Corn or Flour Tortillas (I use 6" (2.5cm))
  • 1 C (135g) Baby Spinach
  • 2 Avocados
  • Chives
  • Cilantro
  • Hot Sauce or Salsa
