The following ingredients have 4 Servings
- 3 Large Cloves of Garlic (peeled and smashed)
- 1 Tbs + 1/2 tsp Olive Oil (extra virgin)
- 1 Large Sweet Potato (small dice, about 2 C (305g))
- 1/2 tsp Chili Powder
- 1/4 tsp Smoky Paprika
- 1/4 tsp Fine Sea Salt
- 1 1/2 C (245g) Pinto Beans (cooked, 1 can, drained)
- 1/2 Lime (juiced)
- 1 tsp Adobo Sauce (from a can of chipotle peppers* (see note) - gluten free if needed)
- 1/4 tsp Fine Sea Salt
- 4 Large Eggs
- 2 tsp Olive Oil or Butter
- 4-8 Corn or Flour Tortillas (I use 6" (2.5cm))
- 1 C (135g) Baby Spinach
- 2 Avocados
- Chives
- Cilantro
- Hot Sauce or Salsa
