Ingredients

The following ingredients have 4 Servings
  • 3 medium sweet potatoes (peeled)
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion (diced)
  • 3 garlic cloves (minced)
  • 13 ounces linguica sausage (sliced)
  • 1/4 cup chicken broth
  • 5 ounces baby spinach

Instruction

  • Spiralize the sweet potatoes using the shredder blade.
  • Heat olive oil in a skillet over medium heat. Cook onions and garlic 1 - 2 minutes or until softened. Add in sausage and spiralized sweet potatoes. Pour broth over the top. Cook 4 - 5 minutes stirring occasionally. Add in baby spinach. Cook 1 - 2 minutes more or until spinach is wilted and potato noodles are softened. Do not over cook or the noodles will get mushy.
  • Remove from heat, season to taste with salt and pepper. Transfer to a serving platter and serve.
