Ingredients

The following ingredients have 8 Servings
  • 1 piece Fresh Ginger ((about 2"))
  • 3 med Sweet Potatoes
  • 4 cups Vegetable Broth ((low sodium))
  • 3 Tbs White Miso
  • 1/2 cup Almond Milk ((unsweetened))
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt

Instruction

  • Peel and mince the ginger
  • Saute ginger in a few tablespoons of veg broth until softened
  • Peel and boil the sweet potatoes for about 20 minutes or until soft
  • Drain the potatoes and mash
  • Add ginger,veggie broth, and spices and simmer for 10 minutes or so
  • Blend soup (immersion or blender) until smooth
  • Add miso to almond milk and whisk until smooth
  • Slowly stir in miso/milk mixture and heat for another minute or two
  • Adj spices if necessary
