Ingredients

The following ingredients have 10 Servings
  • 300 g sweet potato chopped peeled
  • 1 cup custard
  • 250 g sultanas
  • 3 cups self-raising flour
  • 250 g butter chopped
  • 1 1/2 cups caster sugar
  • 2 tbs honey
  • 4 eggs
  • 1/4 cup icing sugar for dusting

Instruction

  • Grease a 25 cm round cake pan.
  • Place sweet potato in a pan with a little water.
  • Boil until tender, then drain and cool. Mash sweet potato with custard.
  • Coat sultanas with 1 tablespoon of the flour, and set aside.
  • Beat butter, sugar and honey in a large bowl with an electric mixer until light and fluffy.
  • Beat in eggs, one at a time, until combined.
  • Lower the mixing speed, beat in sweet potato mixture, then gradually beat in flour until combined.
  • Use a wooden spoon to stir in sultanas, then pour mixture into prepared pan.
  • Bake at 150C for about 1 hour 40 minutes or until a skewer inserted in the centre comes out clean.
  • Serve cake warm or cold, dusted with sifted icing sugar.
