Ingredients
The following ingredients have 10 Servings
- 300 g sweet potato chopped peeled
- 1 cup custard
- 250 g sultanas
- 3 cups self-raising flour
- 250 g butter chopped
- 1 1/2 cups caster sugar
- 2 tbs honey
- 4 eggs
- 1/4 cup icing sugar for dusting
Instruction
- Grease a 25 cm round cake pan.
- Place sweet potato in a pan with a little water.
- Boil until tender, then drain and cool. Mash sweet potato with custard.
- Coat sultanas with 1 tablespoon of the flour, and set aside.
- Beat butter, sugar and honey in a large bowl with an electric mixer until light and fluffy.
- Beat in eggs, one at a time, until combined.
- Lower the mixing speed, beat in sweet potato mixture, then gradually beat in flour until combined.
- Use a wooden spoon to stir in sultanas, then pour mixture into prepared pan.
- Bake at 150C for about 1 hour 40 minutes or until a skewer inserted in the centre comes out clean.
- Serve cake warm or cold, dusted with sifted icing sugar.
