Ingredients
The following ingredients have 4 Servings
- 1 ripe Avocado (flesh squashed with a fork)
- 2 Tbsps lemon juice
- 0.875 cup fresh Mayonnaise
- 2 garlic cloves (crushed)
- 2 Tbsps parsley (finely chopped)
- 1.667 cups Sweet potato (peeled and thinly sliced)
- vegetable oil (for frying)
Instruction
- Mix the avocado with the lemon juice.
- Mix together the mayonnaise, avocado, garlic and parsley. Season with salt and pepper and chill until required.
- Heat sufficient oil in a pan to 160°C and fry the potatoes slices until golden brown and crispy. Remove using a slotted spoon and pat dry with kitchen paper. Serve with the dip.
