Ingredients

The following ingredients have 4 Servings
  • 5 sweet potatoes (, pre-baked (see notes))
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon Kosher salt
  • 1/4 cup unsalted butter (, slightly melted)
  • 1/3 cup evaporated milk ((can use milk or cream))
  • 1 teaspoon vanilla extract
  • 1/2 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter (, softened)
  • 1/2 cup chopped pecans

Instruction

  • Preheat the oven to 325°F. Scoop flesh from pre-baked potatoes into a large bowl and mash with a potato masher. It should be about 3 cups.
  • Add sugar, eggs, salt, butter, milk, and vanilla. Stir together until smooth. Spread evenly in a 9x13-inch baking dish, or an 11x8-inch baking dish if you'd like it a little thicker.
  • In a medium bowl, mix together the brown sugar, flour, cinnamon, and butter with a fork or pastry cutter. You may need to use your hands to create the crumble. Stir in the pecans. Sprinkle the topping evenly over the sweet potatoes.
  • Bake 25 to 30 minutes, or until the topping is lightly browned and caramelized.
  • If adding marshmallows, sprinkle over the top and broil 2 minutes, or until golden brown.
