Ingredients

The following ingredients have 6 Servings
  • 1.5 pounds sweet potatoes (chopped & unpeeled (about 4 potatoes))
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1/2 tsp fresh rosemary (minced)
  • 2 cups water (or vegetable or chicken broth)
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup 2% milk (or coconut milk)

Instruction

  • Add sweet potatoes, onion, garlic, rosemary, water or broth, and salt to the slow cooker. Stir well. Cover and set on High for 3 hours or Low for 5 hours.
  • Add remaining ingredients and stir well. Use an immersion blender to completely blend together or carefully transfer ingredients to a blender and combine. 
  • Serve as a starter or side dish, or top with chicken, chickpeas, and/or parmesan and enjoy as a main course. Enjoy!
