Ingredients

The following ingredients have 4 Servings
  • 2 teaspoons diced shallot
  • 1/2 teaspoon plus 1 tablespoon olive oil divided
  • 1 teaspoon white wine
  • 1 1/2 cups frozen sweet peas
  • 1/2 teaspoon fresh thyme (chopped)
  • 1/4 teaspoon kosher salt
  • Black pepper to taste
  • 2 tablespoons butter

Instruction

  • Heat 1/2 teaspoon olive oil in a pan over a medium-low heat.
  • Add the diced shallot and cook for 1 minute.
  • Add the white wine and stir for a further 1 minute.
  • Turn the heat to low and add the frozen peas, thyme, butter, salt and pepper.
  • Let the heat of the pan melt the butter.
  • Transfer the mixture to a blender or food processor and add the remaining 1 tablespoon of olive oil.
  • Blend until the mixture is smooth.
