Ingredients
The following ingredients have 4 Servings
- 1/2 cup butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup sugar -
- 1 large egg -
- 3 tblsp lemon juice -
- 1 tblsp grated lemon zest -
- 1 3/4 cup all-purpose flour -
- 1 tsp baking powder -
- 1/2 tsp baking soda -
- 1/2 cup raw sugar - or more if necessary
- cooking spray
Instruction
- Pour raw sugar onto a plate and set aside.
- Prepare a rimmed baking sheet with cooking spray. Set aside.
- Preheat oven to 350 degrees.
- In a large mixing bowl combine butter and sugars, ideally with a handheld or stand mixer, until smooth.
- Add egg, lemon juice and lemon zest. Beat until smooth.
- Add flour, baking powder and baking soda. Scrape down sides of bowl as necessary.
- Beat until no dry flour remains.
- Roll dough into 1 inch balls and roll around in raw sugar until well coated. Place on cookie sheet.
- Bake for 12-15 minutes or golden. Let cool on cookie sheet for at least 5 minutes before placing on a wire rack to completely cool.
