Ingredients

The following ingredients have 4 Servings
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar -
  • 1 large egg -
  • 3 tblsp lemon juice -
  • 1 tblsp grated lemon zest -
  • 1 3/4 cup all-purpose flour -
  • 1 tsp baking powder -
  • 1/2 tsp baking soda -
  • 1/2 cup raw sugar - or more if necessary
  • cooking spray

Instruction

  • Pour raw sugar onto a plate and set aside. 
  • Prepare a rimmed baking sheet with cooking spray. Set aside. 
  • Preheat oven to 350 degrees.
  • In a large mixing bowl combine butter and sugars, ideally with a handheld or stand mixer, until smooth.
  • Add egg, lemon juice and lemon zest. Beat until smooth.
  • Add flour, baking powder and baking soda. Scrape down sides of bowl as necessary. 
  • Beat until no dry flour remains.
  • Roll dough into 1 inch balls and roll around in raw sugar until well coated. Place on cookie sheet.
  • Bake for 12-15 minutes or golden. Let cool on cookie sheet for at least 5 minutes before placing on a wire rack to completely cool.
