Ingredients

The following ingredients have 6 Servings
  • 4 ears corn on the cob (husked)
  • 2 tablespoons olive oil
  • 1/2 cup diced red bell pepper
  • 12 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 2 cloves garlic (peeled and minced)
  • 1 lime (juiced)
  • 1/2 teaspoon white sugar
  • 1 teaspoon All Purpose Seasoning

Instruction

  • Preheat grill on high.
  • Brush corn with 2 tablespoons of olive oil.
  • Grill corn for 10 minutes, turning occasionally.
  • When corn is tender, remove from grill and allow to cool slightly.
  • Cut the corn kernels from the cob, and place in a medium bowl.
  • Add the peppers and onions to the corn.
  • In a blender or food processor, mix the cilantro, olive oil, garlic, lime juice, suga and All Purpose Seasoning. Blend until smooth.
  • Stir dressing into the corn salad.
