Ingredients
The following ingredients have 4 Servings
- 1 pound calamari rings
- 1 cup buttermilk
- 1 Tbsp sriracha (or hot sauce of choice)
- 1 cup cornstarch
- kosher salt, pepper
- vegetable oil (enough to fill a small skillet 1 inch deep)
- 1/2 cup ranch dressing
- 1/2 cup sweet chili sauce
- 6 cups lettuce of choice (I used field green mix)
- 3 oz crumbled feta cheese
Instruction
- Put the calamari rings in a bowl, add the buttermilk and sriracha, mix together. Put the cornstarch, kosher salt, and pepper in a separate bowl and mix together.
- Pour enough vegetable oil in a skillet about 1 inch deep. Set it over medium heat for about 4 to 5 minutes, or until the oil reaches 350 degrees.
- Coat a few calamari rings with the cornstarch and gently place in the oil for 2 to 3 minutes. Remove and place them on a plate lined with paper towels. Repeat with remaining calamari.
- Mix together the sweet chili sauce and ranch for the salad dressing.
- Divide the lettuce between 4 plates or bowls, top each with the feta cheese and calamari. Serve with the sweet chili ranch dressing.
