Ingredients
The following ingredients have 4 Servings
- 24 ozs boneless, skinless Chicken breasts
- 6 Tbsps lemon juice
- 1 cup Lemon infused olive oil
- 2 tsps Curry powder
- 1 Tbsp honey
- 0.5 tsp White pepper
- 10 Skewer (metal or wooden)
- 2 fresh lemons (cut into wedges)
- 1 Tbsp Oil (for grill grate)
- salt (to taste)
Instruction
- Rinse the chicken under cold running water and pat dry with paper towels. Using a sharp knife cut into 32 pieces. Place the chicken in a large plastic storage bag.
- In a small bowl, combine the lemon juice, olive oil, curry powder, honey and pepper, whisking to blend. Pour the marinade into the plastic storage bag. Seal bag securely; squeeze the bag several times to thoroughly coat the chicken. Refrigerate for at least one hour.
- When ready to cook prepare grill for direct grilling. Preheat to high.
- Thread four pieces of chicken onto 8 skewers. Thread lemon wedges from 1 lemon onto remaining 2 skewers. Brush the grill grate with oil. Place kebabs on hot grate and grill until cooked, 2 to 3 minutes on each side. When done, the chicken will be firm to the touch and turn white.
- Transfer kebabs to serving platter. Place skewered lemon wedges on the grill and cook for about 1 minute on each side. Serve kebabs garnished with lemon wedges.
