  • 1/2 cup apple cider vinegar
  • 1 tablespoon soy sauce (tamari for gluten free)
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 14.5 ounce block extra-firm tofu
  • 1 tablespoon soy sauce (or tamari)
  • 2 tablespoons cornstarch
  • 2-3 tablespoons olive oil
  • 1 cup fresh pineapple chunks (or canned if needed)
  • 1 red bell pepper, seeded and cut into 1-inch chunks
  • 1 green bell pepper, seeded and cut into 1-inch chunks
  • 1/2 large yellow onion, cut into 1-inch chunks
  • few more tablespoons olive oil, for frying
  • cooked rice, for serving
  • sesame seeds and green onions, for serving
