Ingredients
The following ingredients have 4 Servings
- 1 cup ground flaxseed
- 1 cup hemp seed hearts
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt (fine )
- 1-2 teaspoons cinnamon
- 3 tablespoons coconut flour
- 3 eggs
- 2 mashed bananas
- 4 ounces applesauce
- 2 tablespoons honey
- 2 tablespoons almond milk
- 1/2 cup shredded carrots
- 1/3 cup raisins
- 1/4 cup unsweetened shredded coconut
Instruction
- Preheat oven to 350F.
- Combine dry ingredients in a bowl (ground flax, hempseed hearts, baking soda, baking powder, salt, cinnamon). Combine wet ingredients in a bowl (eggs, banana, applesauce, honey, almond milk).
- Combine dry ingredients with wet and mix until fully combined. Fold in carrots, raisins, and coconut.
- Line a muffin tin with muffin cup liners or grease the muffin cups with oil. Divide the mixture among the 12 muffin cups.
- Bake for 25-35 minutes until an inserted toothpick comes out clean.
