Ingredients

The following ingredients have 4 Servings
  • 1 cup ground flaxseed
  • 1 cup hemp seed hearts
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt  (fine )
  • 1-2 teaspoons cinnamon 
  • 3 tablespoons coconut flour 
  • 3 eggs
  • 2 mashed bananas
  • 4 ounces applesauce 
  • 2 tablespoons honey 
  • 2 tablespoons almond milk
  • 1/2 cup shredded carrots 
  • 1/3 cup raisins 
  • 1/4 cup unsweetened shredded coconut 

Instruction

  • Preheat oven to 350F.
  • Combine dry ingredients in a bowl (ground flax, hempseed hearts, baking soda, baking powder, salt, cinnamon).  Combine wet ingredients in a bowl (eggs, banana, applesauce, honey, almond milk).
  • Combine dry ingredients with wet and mix until fully combined.  Fold in carrots, raisins, and coconut.
  • Line a muffin tin with muffin cup liners or grease the muffin cups with oil.  Divide the mixture among the 12 muffin cups. 
  • Bake for 25-35 minutes until an inserted toothpick comes out clean.
