- 3 pounds red potatoes
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 teaspoon garlic powder
Instruction
- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Wash the red potatoes and dice them into small cubes.
- Place the diced potatoes on the baking sheet. Drizzle with the olive oil and sprinkle with salt, pepper, and garlic powder. Use your hands to coat the potatoes with the oil.
- Bake at 400 degrees F for about 40-45 minutes until the potatoes are tender and golden brown on the edges. Stir the potatoes every 15 minutes so that they brown evenly.
- Season with more salt and pepper if desired before serving.
