Ingredients

The following ingredients have 4 Servings
  • 1 pound linguine
  • 1 pound peeled and deveined large shrimp
  • 1 cup Parmesan cheese
  • 1 cup pasta water reserved
  • 4 tablespoons butter
  • 1 teaspoon olive oil
  • 3 cloves of garlic (minced)
  • 1 cup sun-dried tomatoes in olive oil
  • 1 8 oz. jar pesto

Instruction

  • Cook pasta according to packaged directions for al dente.
  • Remove 1 cup of the pasta water for later.
  • Add the butter to the pasta and toss well
  • Finely chop the sun-dried tomatoes.
  • In a skillet on medium high heat add the pesto, garlic, oil and chopped sun-dried tomatoes and heat for 2 minutes stirring often.
  • Add shrimp and cook for two to three minutes. Stir in the cheese and mix thoroughly.
  • Toss in the pasta to coat. Use the remaining pasta water to thin the sauce to the desired consistency.
