Ingredients
The following ingredients have 6 Servings
- 1 tablespoon extra-virgin olive oil
- 5 cloves garlic, sliced
- 2 yellow squash, halved and sliced into half-moons
- 1 zucchini, halved and sliced into half-moons
- 2 cups halved red and/or yellow grape tomatoes
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons chopped fresh oregano
Instruction
- In a large skillet, heat olive oil over medium-high heat.
- Add garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add yellow squash, zucchini, salt and pepper and cook, stirring occasionally, until vegetables begin to soften, about 3 minutes.
- Stir in the tomatoes and continue cooking just until vegetables are tender and begin to release their liquid, about 3 more minutes.
- Remove from heat and stir in the oregano.
